Post Workout Power Bites

Now that the weather is back to temperatures that I can function in, that means that I'm working out and moving my body like crazy. I love it. Bike rides or runs after work, mowing the grass, yoga in the morning as the sun starts to peek up over the hills, daily walks with Roxy. Love it. Obsessed.

What comes with all of the frequent movement? Hunger.

Always. Hungry.

Always.

Snacks are an important part of my life and I must carry them with me pretty much wherever I go because no one wants to deal with me when I'm hungry. Nope, not good.

Lately I've been pretty much in a relationship with chocolate. It's my daily go to. I think it's replaced waffles for the time being. Embracing the chocolate fueled days. I knew that I wanted to have it as part of my snacks because let's be real, chocolate for meals sounds like a good idea but actually living out that thought isn't as great as we're lead to believe.

Chocolate, lots of nut butters, some oats, dates, and a few other things all combined together to make these post workout (or pre workout, or no workout) power bites. Basically all of my favorite staples combined together to make snack bites, what more could you ask for?!

POST WORKOUT POWER BITES

1 cup dates
3/4 cup oats
2/3 cup almond butter
1/3 cup sunflower butter
1/4 cup coconut flour
1/4 cup maple syrup
3.5 oz. dark chocolate bar

Combine all ingredients except chocolate into food processor or blender. Blend together until ingredients start to form together. Roll into small balls. Place in freezer for 30 minutes. Remove from freezer, melt chocolate, dip balls into chocolate. Place back in freezer for 15 minutes. Remove and repeat dipping in melted chocolate. Place in refrigerator to set up. Serve, enjoy!

Store in refrigerator for up to 7 days.
