Crunchy Peanut Butter Cups - Vegan

We're coming together today to experience something amazing. Peanut butter lovers, stick around. Peanut butter haters, stick around too because you can totally make this with alternatives and achieve amazing results.

I set out to make some bliss balls last week. Bliss balls are easy to make and even easier to eat. Once you eat one then the rest of them are done for and you immediately proceed to eat at least half of the batch. That's fine though! These things happen and I have come to accept that as a part of life.

But I made some bliss balls and decided to take them up a notch. That's how these crunchy peanut butter cups were born. A crunchy bliss ball filled with smooth, rich peanut butter. You really can't ask for much for than this. These bliss balls will set your taste buds (and peanut butter cravings) free!

CRUNCH PEANUT BUTTER CUPS

makes 6

1 1/4 cup dates
1/3 cup walnuts
1/4 cup buckwheat
Drop of vanilla
Pinch of salt

Peanut butter
Cacao nibs or chocolate chips
Cinnamon

Blend together ingredients in blender or food processor. Roll into balls and press holes in the centers. Fill with peanut butter and top with cinnamon and cacao nibs. Serve, enjoy!

Store in refrigerator for up to 7 days.
