St. Patrick's Day Ice Cream Bars - Vegan

St. Patrick's Day isn't really one of my favorite holiday's to celebrate. In fact, the only way that I'll celebrate is by eating lots of greens (salads) and drinking even more greens (smoothies). No complaining here! It's also not much different than a typical day in my life. But that's totally great because I love living on fresh plants. Every day is a celebration when you eat them in abundance!

In these ice cream bars you won't find any funky artificial colors or ingredients. There's actually only 6 ingredients here! I also find that so amazing. Six simple foods provided by the Earth are combined to create such vibrant and delicious ice cream bars. Awesome, right!? Don't talk that for granted, my friends. St. Patrick's Day Ice Cream Bars

serves 4-8

Crust:
1 cup dates
3/4 cup oats
3 tablespoons cacao powder

Blend together all ingredients. Press into parchment paper lined 5x5 inch pan. Set aside.

Ice Cream Filling:
3 frozen bananas
1/2 cup almond milk
2 large handfulls spinach

Blend together all ingredients. Pour into pan. Place in freezer to set up for 3+ hours. Drizzle with melted chocolate, if desired. Serve, enjoy!

Store in freezer. Place in refrigerator to thaw approximately 20 minutes before serving.
