Pumpkin Caramel Pockets

The first pumpkin recipe of the season and it's a good one! 

*runs to the kitchen to grab one of these so that I can accurately describe it*

A soft and flaky outside, sweet and gooey inside. Cinnamon, pumpkin, caramel; mmm. 

When I first made these I was looking for something quick to make that had the rich texture and taste of a fresh baked pastry from *insert your favorite bakery here.*

Somehow I have achieved the dream and these homemade pumpkin caramel pockets were born.

I'm all about creating simple recipes because let's be real, we don't always have 3 hours to spend making a pan of cinnamon rolls. Although, I do wish that was the case... 
But since it's not, I don't want any of us to have to sacrifice taste, enjoyment, or health because we have a lot happening in our days.

I don't know where I'm going with this thought other than letting you know that it's cool. I got ya. Most of my recipes are and will continue to be busy life friendly.

And with that being said, let's make some fall food!

No Bake Chocolate Peanut Butter Donuts

I'm back to running again and loving it. Getting back into running shape is hard after taking basically a year off! Over the past year I've ran here and there but not really consistently. I'm back in a place where I'm ready to make it a big part of my life again and it feels so good. I never take my phone or anything with me. I just go run in the woods where it's silent and everything is still. It's so therapeutic but it's hard work.

When I get back from my runs I am usually starving. I don't like to eat beforehand because it makes things so much worse for me. But afterwards, straight to the kitchen. These are my go to lately because they have all kinds of goodies packed into a donut. So delicious, so much fun!! Post run donut, anyone?!

No Bake Carrot Cake Balls

Spring is officially in full swing and I am so pumped.

Warmer weather, blooming flowers, brighter days, carrot cake.

Oh, yes. Carrot cake.

So let's be real, as much as I love the idea of eating carrot cake every day in celebration of spring I don't see that as being very realistic. And the thought of that made me sad. That's when I decided to take matters into my own hands and these carrot cake balls were born. Made from whole foods, a spring snack that you can take with you on whatever adventures you're going on.

Spring cleaning, baseball games, Easter gatherings, long walks; whatever you have going on is a perfect event for this little snack.

Chocolate Fudge Cupcakes - Gluten Free & Vegan

Today I'm sharing the ultimate goods.

I've made this recipe a few times now and you'd think that after falling passionately in love with these cupcakes each time I had the pleasure of putting one in my mouth that I'd get tired of them.

Nope. Never happened.

Can you blame me though?

Recipe testing sure is a hard job. But ya know, someone has to do it.

A rich fudge cupcake with decadent peanut butter icing. Easy enough for us all to make. No complicated steps or ingredients. Gluten free and vegan. DANG. You really can't ask for much more than that. 

Chocolate Crunch Bites

Sometimes you need a little bit of crunch in your life.

I'm not big into most crunchy foods. Whenever I think of crunchy I think of salty things. I'm more of a sweets person so crunchy doesn't happen too often. But who says you can't have crunchy sweets?

You can, you definitely can.

This is my go to recipe for when I'm craving those potato chips that I don't even care for in the first place. I'm a big fan of potatoes, but in chip form... not my thing. These chocolate crunch bites, totally my thing.

Gooey Double Chocolate Brownies

I love raw vegan desserts. So much. The first raw dessert that I made was way back in 2013. It was a brownie recipe and you can find it here. Looking back at those photos makes me cringe, but also makes me proud of how far I've come and super excited to see how much more I grow in the next 4 years.

It's easy to be hard on yourself and feel like your photos aren't good enough or you're not where you want to be in your projects. I use those feelings to fuel me towards improvement. I don't dwell on them because I know that I've come a long way and I'm sure you have too in whatever adventures you're on. Let's all look at where we're at currently and see it as a stepping stone instead of a deserted island of "not good enough." You're good enough, and so am I. Let's celebrate that with some brownies, shall we?

Chocolate Coconut Cashew Bars

I have been so hungry lately. You think that you want to be hungry all the time because then you get to eat more and who doesn't want to do that, right?! Wrong. Being hungry all the time is tough. I'm think it's because I've been amping up my activity levels lately and my metabolism knows it but I haven't been prepared for it.

I've solved that problem though with these chocolate coconut cashew bars. Made of simple, wholesome ingredients. No added sugars, which is important to me right now. These bars are packed full of healthy fats and proteins to keep you moving and grooving at your full potential. I've been keeping a container of them in the fridge and grabbing one whenever I head out the door because you never know where you'll be when hunger strikes!

Vegan Almond Butter Cups

It's no secret that chocolate is my jam. It's been a while since I've made my own and I figured that it's about time to change that.

More healthy fats popping up in my diet lately. A very good thing, I believe. I want to do a whole post on digestion soon, when I can type again. My finger got into a fight with a knife the other day and the knife won. Let's just all take a moment to be grateful that the tip of my finger is still attached because it sure was a close one. Anyways, digestion post. Stay tuned for that; but to sum it up really quick lets just say that I've been making some changes and I have more that I want to make to try and get my body working properly. Ah, life.

On to the important topic of the day; almond butter cups. All natural ingredients that are good for your body and soul. Mmm. Simple to make. You can have a batch made in 30 minutes, no problem. Probably best for those of us living in cooler climates if you want to take them places. But still a great snack to grab out of the fridge for the lucky ones living in warm places too. And on that note; let's get to it.
