What I Ate Wednesday

It's been over a month since I've shared a What I Ate post so yesterday I figured what better day than today to do so. This is a typical day of what I eat on a work day. Everything is vegan, gluten free, and so easy to throw together. 

I also wanted to throw in a little Back to Basics health update before sharing the goods.  You can catch up on all of that if you haven't already by clicking here, here, and here.

I don't know why or how but I am pretty much back to normal after my few months of digestion struggles. I never went back to any doctor after my first bad experience and just decided to do things for myself until it got worse. Then I would go see someone, if need be. Luckily I didn't need to proceed with any more doctors visits and somehow got better. A few changed that I've made and stuck to were adding more healthy fats into my diet, drinking more peppermint tea, and eating more blackstrap molasses. I don't know which, if any, of these are responsible for helping me feel better but I am feeling great and so grateful for that! I don't really have much else to say about it but I figured that it was time for another update on that just to touch base with where I'm at currently.

Onto the yumminess now!

BREAKFAST

For breakfast number one I try to have a smoothie. This is my pre workout meal and I like to keep it light before working out. I've been drinking these Daily Harvest smoothies lately which I love! I wake up at 5 a.m. and am out the door by 5:15 so I like to get ready in a flash. These smoothies help me do so because they come prepackaged right to your door. All you have to do is order them, toss them in the freezer once they arrive, pick one to make when you desire, add liquid, and blend. Then you're good to go. So easy and no mess! For my second breakfast I had chocolate banana ice cream topped with cinnamon, strawberries and some Nature's Path Organic cereal on the side.

SNACK

At work I've been having yogurt every day. I go in yogurt phases and I'm totally in one right now. I had peach and mango yogurt topped with some granola.

LUNCH

For lunch I had one of the easiest things ever. Rice, black beans, green beans, cauliflower, zucchini, and salsa all mixed together. Everyday is usually some type of similar combination which keeps it simple, but also interesting and tasty!

SNACK

Once I got home from work I had a green smoothie before getting in a quick afternoon bike ride.

DINNER

For dinner I had potatoes with ketchup. I'm definitely on a potato kick as well lately. Can't get enough!

SNACK

To end the evening I had two chocolate chip cookies. Yum!

While looking at these type of posts it's important to realize this and never compare your own dietary choices to mine or anyone else's. Eat what makes you feel good and eat as much as you need to satisfy your body!
