What I Ate Wednesday - Gluten Free Vegan

Happy Wednesday! It's been a few weeks since I've done a "What I Ate Wednesday" post so I figured that I'd share today. Those of you following my "What I Ate" posts know that I was following a Raw Till 4 lifestyle for most of this year. I've been kind of MIA with these posts for that reason. Last month I began questioning myself and my happiness when it came to my intake. It was becoming hard for me to maintain the lifestyle and I was becoming very restrictive with it. I began to feel like I was missing out a lot on life in general and noticed that I was becoming very uncomfortable with consuming (healthy!) fats. I knew that wasn't okay and that wasn't me. I mean come on, I made this Brownie Ice Cream Explosion, that's what I'm destined to do (and eat!). For a while I wasn't sure what to do. I could either "stick it out" and get through that tough phase or I could become a "regular" vegan again and reintroduce more things into my diet. I felt very conflicted because I promoted and believed in Raw Till 4 so much. But in the end I knew that it was something that I was no longer benefitting from and didn't want to dig a deeper hole for myself that I was in. I began to add more proteins and fats into my diet. Peanut butter, beans, chickpeas, nuts, seeds, etc. It was very challenging for me at first because I didn't know what or how much to eat. I was stuck in the Raw Till 4 mindset and it was very hard to break that habit. But today I can say that I feel as if I consume a fairly "normal" plant based vegan diet and am thriving off of it! I'm really excited to share this post with you guys! So let's do it.

Breakfast:

Gluten Free Oatmeal

I am a big fan of "fancy" breakfasts like this one. This is brown rice cereal topped with pears, kiwi, blueberries, strawberries, and peanut butter. I found the brown rice cereal in the back of the cupboard while I was frantically looking for oats this morning. I'm out! Oh gosh. But this brown rice cereal came to the rescue. I added vanilla to it to sweeten it up a bit and it was a perfect breakfast! Oh, I had a big glass of watermelon juice too. Getting in as much watermelon as possible before the season is over!

Lunch:

Can I even call this a proper lunch? I'm not sure. But I've had it the past two days and can verify that it is great! I had a green smoothie consisting of kale, bananas, and coconut water with a side of dates and peanut butter. Oh goshhh, yum. Gettin' in the greens and the peanut butter date heaven at the same time!

Snack:

It was a beautiful day today and I had to mow grass so I made some fresh orange juice beforehand. A perfect afternoon snack! I blended it with ice to make it nice and cool. I love orange juice and I always wonder why I don't have it more often.

Dinner:

I am not one to make extravagant dinners often. Tonight was no exception to that. Simple, quick, nutritious, delicious. Those are the only requirements. I made some baked fries and topped them with hummus. I've been on a hummus kick lately and lovin' it. It really goes with anything and is so easy to upgrade a simple meal into something great. Woo, hummus.

I also had a bowl of chocolate banana ice cream but forgot to take a picture, so you can use your imagination!
