Chocolate Coconut Cashew Bars

I have been so hungry lately. You think that you want to be hungry all the time because then you get to eat more and who doesn't want to do that, right?! Wrong. Being hungry all the time is tough. I'm think it's because I've been amping up my activity levels lately and my metabolism knows it but I haven't been prepared for it.

I've solved that problem though with these chocolate coconut cashew bars. Made of simple, wholesome ingredients. No added sugars, which is important to me right now. These bars are packed full of healthy fats and proteins to keep you moving and grooving at your full potential. I've been keeping a container of them in the fridge and grabbing one whenever I head out the door because you never know where you'll be when hunger strikes!

CHOCOLATE COCONUT CASHEW BARS

1/2 cup almonds
1/2 cup cashews
1/2 cup shredded coconut
1/4 cup almond milk
1 tablespoon pumpkin seeds
1 teaspoon lucuma powder
1/2 teaspoon cinnamon
1 tablespoon cacao nibs
1 tablespoon carob

In your blender or food processor blend together almonds, cashews, coconut, milk, pumpkin seeds, lucuma, and cinnamon until dough forms. Remove half of dough from blender and place in bowl. Add cacao nibs and mix together. Set aside. Add carob to mixture that is still in blender. Blend until incorporated. Remove from blender and press into rectangular pieces. Repeat until all dough is pressed out. Roll one chocolate and one plain piece together to create spiral. Press back into rectangular shape and repeat until completed. Serve, enjoy!

Store in refrigerator for up to 7 days.
