White Bean Burger

So I've had a bag of cannellini beans for months. I bought them a while back with the intention to make something awesome with them. But then life happened, ya know? I got distracted with other ideas, events, etc. It happens!

Recently I've been pretty lazy with my meals too. Such a shame! So today I figured that I needed to change that, asap. And I did just that!

White Bean Burger

Serves 4

2 cups of cooked, drained cannellini beans
1/2 cup cooked quinoa
1/2 cooked corn
1/3 cup rice flour, oat flour, or flour of choice
1 teaspoon parsley
1 1/2 teaspoon chili powder
1 teaspoon lemon juice
1 flax egg (1 tablespoon flax + 3 tablespoon water)

Preheat oven to 375 degrees. Place the beans in a bowl and mash them up a little bit then add in quinoa and corn and mix together. Add in flour and mix until incorporated. Then add in parsley, chili powder, lemon juice, and flax egg and mix together. Separate mix into four burgers, coating with oil and placing a parchment paper covered baking sheet. Bake for 25 minutes, flipping halfway through.

You can toss these burgers onto a bun with your favorite toppings or you can get creative like I did and put it on top of a salad. I used spinach, roasted chickpeas, carrots, lemon slices, sunflower seeds, and tahini. Get creative, have fun, and enjoy!
