What I Ate Wednesday - Fall Edition

It has been a while since I've done a What I Ate Wednesday and I thought it'd be fun to share a Fall Edition of what I'm enjoying lately. I try to eat seasonally for the most part. I'm someone who can eat the same food for weeks and weeks so it's a fun and easy way to switch things up and eat different things. Going to the farmers market all summer helped me with that too. I made it a goal each week to buy something new or something that I didn't really know how to use in my meals, looking at you radishes, and have fun with it. Now the farmers market has ended for the year (insert sad face here) and I'm back to strictly shopping at grocery stores. I'm trying to stick to my goal for the fun of it as well as to switch things up and keep my body on it's toes. :)

BREAKFAST

This has been my go to breakfast lately. I am loving smoothies even with the weather getting a bit colder. Bananas, pumpkin spice almond milk, ashwagandha, protein powder, and almond butter. #obsessed

LUNCH

I stopped meal prepping when I quit my desk job because I found that I wanted to eat intuitively. A lot of the time the meals I'd prep to take to work weren't exciting at all to eat but I was at work and didn't really have any other options. Now I've been roasting veggies and making random foods that I can combine in different ways to eat each day and that has been a game changer for me. Here we have: quinoa, roasted red peppers, broccoli, and butternut squash all drizzled with lemon juice and dipped in hummus. Let's be real though, the veggies and quinoa are just a vehicle to get the hummus into my mouth. Just over here waiting for the day that I turn into hummus. It's bound to happen.

SNACK

A few weeks ago I bought a lot of apples, if you care to read about how much I love them then you can hop over here. But now I have eleventy billion apples that are taking over my life and I'm eating them every chance I get so that they don't go bad. I mean, it's a great problem to have. I'm not complaining, just giving you an accurate description of what's up over here. One of my favorite ways to decrease the abundance of apples is to slice them up, sprinkle granola, cinnamon, molasses, and peanut butter on top for a quick snack. So good!

DINNER

Pumpkin alfredo. This happened accidentally. I had some leftover pumpkin that I needed to use and this is what it ended up as. If I was the pumpkin, I'd be pretty happy to be turned into alfredo. There aren't too many things I can think of on the list of dinners that are better than a fresh plate of alfredo. I'll probably be sharing the recipe for this deliciousness after another round of recipe testing, which means another round of getting to eat this. Yessss.

What I Ate Wednesday - Vegan + Gluten Free

I can so easily get lost in the Youtube world of What I Ate videos. There's just something about them that pulls me in. That probably sounds strange, but if you're here reading this then I bet that you understand!

This is just a quick post of what I ate today. It's all vegan, gluten free, and pretty freakin' delicious so I thought that it would be fun to share!

BREAKFAST

Banana date ice cream is my jam. It's probably my favorite combo and I haven't had fresh dates in a while so I've been missing it from my life. I didn't realize how much I really did miss it until I bought some on Sunday and have been eating them every day since. Usually in this form! I topped my ice cream with a little bit of a Larabar and cacao nibs. YUM.

SNACK

Typically... another Larabar. I'm hooked.

LUNCH

I made rice, corn, edamame, and roasted chickpeas. I mixed that all together with some bbq sauce and then added romaine and sriracha to really top it all off. This combo was amazing!

SNACK

Half of a mini watermelon in the sunshine before my bike ride. Nothing better!

DINNER

I made waffles for dinner because sweet things are where it's at. I topped my waffles with blueberries, maple syrup, and white chocolate peanut butter. The waffle recipe is right here! Try this combo out, you won't regret it!


That's it! Another day in the books. If you like these posts let me know! I think the next one I do will be a macro/calorie version. I don't count calories or macros regularly but I find it fun to do on occasion just as an experiment.

What I Eat In A Day - Vegan

I don't know about you, but I love checking out "What I Ate" videos on Youtube. I love to get ideas of delicious meals to try and make. I've shared some videos just like that on my Youtube channel in the past and am on my way to getting back into doing so again. 

The winter nights are usually when I spend a lot of time aimlessly browsing social media (such a bad habit) and I decided to start making videos again to spend that time doing something a bit more productive. I like documenting my life and I enjoy creating things so I made it a goal to upload as many vlogs as possible. I don't think I'll be getting one up every day but I'm shooting to have some up more often than before!

Anyways, before you head over to Youtube to watch me do life, let's get to what I typically eat in a day.

BREAKFAST

Banana ice cream breakfasts happen 90% of the time and I love it so much. I made cherry ice cream and topped it with so much deliciousness. Frieda's Produce hooked me up with some dragon fruit and I've been enjoying the fresh fruits that I've had access to lately. They brighten up my dreary winter days!

LUNCH 

For lunch I had leftover Chipotle with extra rice and blue corn Cabo Chips. A very effortless but delicious lunch!

SNACKS

Mango and chocolate covered espresso beans were my afternoon pick me ups! I've been buying mangoes lately and surprisingly getting some perfectly ripe ones. Victory!
I went to Darrin's and took some of his chocolate covered espresso beans too. I used to be very into snacking on them but haven't had them in the longest time. Definitely need to get back into buying them!

DINNER

I have a variation of this meal almost every day. I use rice and kale as the base and add on whatever veggies I'm feeling. Today I went with cauliflower, mushrooms, chickpeas (which I ate most of before I took this picture, whoops) and bbq sauce! So good.


That's all I had for the day! I also want to say that I share what I eat for fun and to show that eating vegan doesn't have to be fancy or expensive. What I eat varies from day to day and the amounts of food that I eat (or show) isn't intended to be a guide for others to use. It's simply a way for me to share a bit more about my foods and my life with you all. Eat what you want and eat as much as you need to fuel your body, always!
