Two Ingredient Pizza Crust

Back in high school I worked at Pizza Hut for a while. I really enjoyed the job for the most part. I got to know a lot of great people, got extra money, and free food too! There's not much better than that when you're a teenager. Back then I didn't really care about my diet and what I put into my body. Times sure have changed now though and I haven't had Pizza Hut since last year. Which isn't an easy thing when Pizza Hut is one of the five restaurants in your town! But I'm sticking to my guns and still going strong. I've just found alternative ways to eat pizza and still feel good afterwards! Let's be honest, everyone loves pizza. It's such a versatile food. You can use so many different crusts, sauces, cheeses, toppings, the possibilities are endless! So today I'm going to give you a base recipe for a pizza crust and give you two ideas of what to top it with. But you have the freedom to top this with anything and everything you'd like.

Two Ingredient Pizza Crust

1 1/2 cups self rising flour*
1 cup greek yogurt

Mix together two ingredients in a medium bowl. That's it. Honestly. Then you just use your dough to create a pizza like you normally would. This makes one 8 inch pizza crust. The crust will be pretty thick. Or you could make two smaller crusts and have two different pizzas like I did.

*If you don't have self rising flour you can add 1 1/2 teaspoon baking powder to your flour to make some!

Summer Pizza

Olive oil
Feta cheese
Parmesan cheese
Pineapple
Spinach, arugula, etc.

Coat your rolled out dough will a very thin layer of olive oil. Add the cheeses next, then top with pineapple. Bake at 400 degrees for 10 minutes. Remove from oven and top with your greens. Drizzle with a little bit more olive oil. Slice and enjoy!

Traditional Pizza

Sauce of choice Mushrooms Feta

Top your crust with a layer of sauce as thick as you desire. Add your cheese and mushrooms. Bake at 400 degrees for about 10 minutes. Remove from oven. Cut. Enjoy!

These pizzas are so quick and simple, you'll be enjoying them within 25 minutes!

Sweet Potato Fries and Lemon Baked Chicken

Yesterday wasn't a very productive day. I was expecting it to be nice out and it was a pretty dreary day overall. I knitted a lot and worked on a Mother's Day gift that I'll share with you all in a future post. But yesterday I was trying to think of quick and easy lunch ideas. Of course I'm always doing that. I realized that I had one that I've been doing for months now. It's so easy I didn't even realize it.

Sweet Potato Fries

Now this isn't even a recipe really! It's that easy and only takes about 10 minutes to cook. (Depending on how you soft you like you sweet potatoes.) You just need four things!

First preheat your oven to 400°. You need a sweet potato (obviously), olive oil cooking spray, and a knife.

Take your knife and cut the potato into little triangles. Or you can shape them like fries, or anything you want. You're the boss! I usually make mine about half an inch thick because I like softer potatoes. But once again, the choice is yours!

Lay out your potato pieces onto a foil covered cookie sheet and spray the top of the potatoes with your cooking spray. Bake them for about 10 minutes or until they're soft enough to please you.

Take them out of of the oven and there you go! I had these with a cup of yogurt too. But you could have them with a sandwich, salad, anything!

Later in the afternoon I got into dinner mode and decided to whip up a marinade really quick for some chicken that needed to be cooked.

Lemon Marinade

1 cup lemon juice
1/4 tsp garlic salt
1/2 tsp minced onion
1/2 tsp oregano
a pinch of pepper
cayenne pepper to top

Preheat your oven to 350°. Then in a large bowl mix together everything except the cayenne pepper. Place your chicken into the mixture and refrigerate for 2-3 hours. You can do it for a smaller amount of time but the flavor won't be as strong. After your chicken is finished marinading remove it from the fridge and place it in a baking dish along with the remaining marinade. Spread the cayenne pepper over the top of the chicken. The amount used will be determined by how much cayenne you prefer. Cover the dish with foil and bake in the oven for 40 minutes.

Once removed from the oven keep the chicken covered and let it sit for about 10 minutes. Remove the foil and serve!

I served my chicken with a rice and lentil mixture. Chicken has always been my go to food whenever I'm not sure what to make. I just find it really easy to cook and it can be served with just about anything you're craving at the moment. I've even had my sweet potato fries with this lemon baked chicken before. It's all about variety!
