This is one of those snacks that I absolutely love but don't have enough of. Do you have foods like that in your life? The things you don't eat very often but when you do it's a truly magical experience.
Why does that happen? I wish I knew.
Chocolate avocado pudding is that for me. Just like a favorite relative that you only talk to on Thanksgiving and Christmas and question why it's that way.
But that's why were here today. Sharing pudding recipes and getting us all inspired to eat more of the things that we don't have enough of in our life. And hey, if you want to call and check in on that relative then that's cool too!
I topped this pudding with One Degree Organic granola. This is not sponsored in any way but their granola is 10/10. In love. I found it on sale at the store last week and grabbed two bags because, well, I am obsessed with granola and this stuff is amazing. I'll be getting more on my trip this weekend. CHOCOLATE AVOCADO PUDDING
1/2 cup dates
1/4 cup + 1 tablespoon cacao powder
1/4 cup maple syrup
1 tablespoon coconut sugar
Handful of granola, I used this
Blend together all ingredients until smooth. Serve with granola, enjoy!
