What I Ate Wednesday - Vegan + Gluten Free

I'm here today to share a quick peek into what I eat in a typical day. As usual, everything is vegan, gluten free, and super delicious! This particular day happened to be a work day and it's quite different than a day of eating at home would be. But it's all simple, easy foods that you can easily prepare and take with you on the go. Breakfast

For breakfast I had peanut butter banana ice cream topped with molasses, coconut sugar, coconut, buckwheat groats, and cinnamon. Ahhhmazing!

Snack

I'm obsessed with this Larabar. I eat it almost everyday and I don't think I'll ever get tired of it. SO GOOD.

Lunch

So glad that I documented this rare occasion of me actually eating a salad. I topped it off with some red pepper dressing.

Snacks

During the afternoon at work I was still pretty hungry after the salad so I grabbed the emergency stash of dried mango that I keep in my bag.

Once I got home I had a green smoothie snack that was so refreshing and just what I needed to fuel me until dinner!

Dinner

Potatoes, potatoes, potatoes. YUM. With a side of lemon zest hummus... double YUM.

Also, remember that this is just one day of eating for me. Each day is quite different and that's okay! While looking at these type of posts it's important to realize this and never compare your own dietary choices to mine or anyone else's. Eat what makes you feel good and eat as much as you need to satisfy your body!
