Almond Joy Bites - Vegan

Vegan Almond Joy

I'm all about creating little snacks that I can grab and take with me or that can just hang out in the fridge for a while until I'm ready to eat 'em. Having the convenience of instant healthy and delicious snacks is something that I can't get enough of.

I'm a big fan of sweet stuff and even though Almond Joy candy bars were never my thing I went and made them my thing the other day. Raw vegan almond joy bites turn out to really be my thing. They disappeared in no time and I'm sure that they'll do the same in your kitchen once you mix up a batch!

Gluten Free Almond Joy Bites

Almond Joy Bites

makes 8-10 bites

2 cups dates
1/4 cup almonds
1 tablespoon chia seeds
1 tablespoon almond milk
2-3 tablespoons coconut
2-3 tablespoons cacao nibs

Blend together all ingredients except coconut and cacao nibs. Remove from blender and add in coconut and cacao nibs. Roll into medium sized balls. Serve, enjoy!

Store in refrigerator for up to 7 days.
