Chocolate Chip Cookie Dough Cheesecake - Vegan

I made this cheesecake a while ago and wasn't sure what to do with it or what it even was exactly. I just blended some ingredients together in the Vitamix until it tasted great. Then it sat in the freezer for a few weeks before I finally decided to take it out and make something amazing. I am quite the procrastinator but usually my procrastinated results come out pretty nice. I guess you could call that a talent of mine. Amazing procrastination skills.

Cheesecakes and blizzards are my favorite things to make. Maybe I'll just turn this into a cheesecakes and blizzards blog. I was at the store the other night and they had vegan cheesecakes there. Man, oh man. I sure did want one. But why spend $9 on cheesecake when you can do the same thing at home?!

Chocolate Chip Cheesecake

serves 8

Cheesecake:
1 cup almonds
1 cup cashews
1 cup dates
1/3 cup almond milk
1/4 cup maple syrup
Drop of vanilla

Blend all ingredients together until smooth. Pour into parchment paper lined pan and place in freezer to set up for 8 hours or overnight.

Icing/Toppings:
1 cup dates
2/3 cup water
2 tablespoons cacao powder
Cacao nibs
Coconut sugar

Blend together dates, water, and cacao. Spread onto cake. Press cacao nibs onto sides on cake and sprinkle top with coconut sugar. Serve, enjoy!
