Bold Veggie & Rice Bowl

You need to make this. You must do it. Tonight, tomorrow, asap. I've been having huge rice dinners almost every night. I don't know why, but they rock. I usually just throw some random veggies on top. But tonight I wanted to do something a little more elaborate. No worries though, this is still super easy! Of course, you know how I roll.

What's your favorite rice? I'm loving basmati rice lately. Or white rice. It's pretty tasty too. I find brown rice to be a bit hard to digest, at least eating it in the large amounts that I do. In this recipe you can you whatever rice your little heart desires. I also tell you that this serves two, which seems like a reasonable amount. I ate the whole recipe though. Ever since I've been doing 80/10/10 as I previously mentioned, I've been amping up my intake and having so much energy as a result. Who doesn't want more energy? And more rice?!

I know I do and if you're here with me, then I'm assuming that you do too. So let's do it.

Bold Veggie & Rice Bowl

serves 2

Veggies:
1 medium zucchini
2 vine tomatoes
1/2 cup sliced mushrooms

2 tablespoon lemon juice
1 tablespoon tahini

Slice veggies into thin pieces or however you'd like them. Mix together lemon juice and tahini. Toss veggies in dressing, completely covering them.

Rice:
1 and 1/2 cup rice of choice
1 teaspoon curry powder
1/4 teaspoon turmeric

Prepare rice. Stir in curry powder and turmeric.

Split veggies and rice into two servings. Serve, enjoy!
