Chocolate Passion Fruit Sundae

Earlier this week I went to one of my favorite grocery stores. I wasn't there for anything in particular, basically just stumbling around and seeing what I could find. What I did find though, definitely made the trip worth it. For the first time ever I found passion fruit. I was so so so excited. I grabbed a bunch of them and danced my way to the registers. Bill, my cashier, even commented about the passion fruits and shared the excitement with me. We connected, Bill and I. A beautiful passion fruit connection. I came home and put the passion fruits to bed in the fruit drawer of the refrigerator and then went to bed myself, knowing that the next day would bring lots of fruity happiness.

I woke up the next morning and went through my normal routine of breakfast, internet, and yoga. Then the moment came and the Chocolate Passion Fruit Sundae happened. Um, yum!!

I just made this a single serving dessert (or lunch, or breakfast, or whatever you want it to be), but you can double it or triple it. Whatever works for you! I think it's nice to be able to make just a single serving of something though and get to enjoy it as a little treat. The base of this sundae is a raw brownie, different than some of my other brownie recipes. But soft, chocolatey, and just as delicious (maybe even more delicious). I topped it with a simple banana made into banana ice cream and finally topped that off with the passion fruit. The combination of the banana and the brownie really make the passion fruit seem not quite so tart. Even though I do like the passion fruit alone, this is also a great way to eat it. Variety is great and so is this sundae!

Chocolate Passion Fruite Sundae

serves 1

Ice Cream:
1 frozen banana

In blender, blend frozen banana until smooth. Add a small amount of water or dairy free milk of choice to help it blend easier. Pour into a bowl and place in the freezer while you make the brownie.

Brownie:
2/3 cup dates
1/2 cup oats
1 tablespoon cacao powder
1 teaspoon coconut oil

In blender or food processor, blend together all ingredients. Shape into a square.

Place brownie on a plate or in a bowl and scoop your ice cream on top of the brownie. Top ice cream with 1 passion fruit. Enjoy!
