Happy Labor Day everybody! I hope you had lots of delicious food at your picnics all weekend long. I hit up the fruit salad big time this afternoon! But this morning I had a little extra time and it got me thinking. Fall is right around the corner. 20 days to be exact! And with Labor day, school back in session, and the 60 degree weather that we're getting this week; I feel like it's already here!

There's no better way to kick it off other than to make a good ol' apple pie. Right?! Raw vegan and gluten free, of course :)

Apple Pie

Serves 8

Crust:

1 1/2 cup dates
1/4 cup buckwheat groats
2 tbsp coconut oil
1 tbsp vanilla

Blend everything together in a food processor and then spread it into the bottom of your pie pan.

Topping:

1 apple lemon juice
cinnamon
crushed almonds
chocolate sauce

Cut one apple into 14-16 slices. Place into lemon juice to keep from browning. Place the slices onto the crust and sprinkle with cinnamon, crushed almonds and chocolate sauce (All optional, but recommended :) )

Place in the refrigerator for about an hour before serving.
